Russian Potato Salad

Potato salad, delicious and suitable for special occasions, accompanied by a good slice of ham and fruit.

  • 2 potatoes, for salad, chopped into 1 cm pieces and cooked in salted water
  • 2 chicken breasts, in strips
  • 1 green apple, chopped to the same size as the potato
  • cheeses, of your choice, chopped to the same size as the other ingredients
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon pimentón, red
  • whipping cream, to your liking
  • mayonnaise, to taste
  • salt, to taste
  • pepper, to taste
  • 1/4 onions, finely chopped
  • 1 clove garlic

  • Cook the potato in salted water.
  • Cook the chicken breast with cilantro, onion, garlic, salt, and pepper. Let it cool and shred it into thin strips.
  • Chop the apple and reserve it in water with lemon, chop the cheese, and chop the parsley, bell pepper, and if desired, carrot into very small cubes.
  • When everything is cold, mix the ingredients with the sour cream and mayonnaise, adding salt and pepper to taste.
  • It can be served with ham medallions or any cold meat and fruit like melon, papaya, kiwi, and strawberries.
