Place the potatoes, carrots, and eggs in a large pot filled with water. Wait for it to boil and let cook for 10 minutes before peeling the eggs. Place them under cold water to prevent further cooking.
When the carrot is soft, about 2 minutes later, remove from the water. When the potatoes are ready, about 5 minutes later, remove. Add the peas to the boiling water and cook for 2 to 3 minutes. Drain the peas from the water.
Chop the egg, potatoes, and carrots into cubes. Add the peas, olives, chopped green onions, and parsley. Fold in the mayonnaise and season with salt and pepper. Leave in the refrigerator until ready to serve.
