Ingredients: 3 red potatoes, medium peeled; 1 carrot, medium, peeled and cut into three parts; 2 eggs; 2 cups peas; 1/2 cups olives, cut in half; 3 green onions, with the green and white parts chopped; 2 tablespoons parsley; 4 tablespoons mayonnaise; salt; pepper

Place the potatoes, carrots, and eggs in a large pot filled with water. Wait for it to boil and let cook for 10 minutes before peeling the eggs. Place them under cold water to prevent further cooking. When the carrot is soft, about 2 minutes later, remove from the water. When the potatoes are ready, about 5 minutes later, remove. Add the peas to the boiling water and cook for 2 to 3 minutes. Drain the peas from the water.
