Start the year by eating healthy; this delicious quinoa and citrus salad is full of flavor and very healthy, accompanied by a delicious lemon vinaigrette. Quinoa is high in protein and a good source of amino acids.
In a small pot over medium heat, bring the water to a boil, add salt and quinoa, and cook on low heat, covered, for 20 minutes. Cool down.
In a medium bowl, mix the quinoa with the grapefruit wedges, orange, bell pepper, edamame, avocado, pineapple, peanuts, sesame seeds, and panela cheese.
For the vinaigrette, mix the lemon juice with honey, garlic powder, salt, and pepper. Emulsify with olive oil.
Serve the salad with the lemon vinaigrette.
