Quinoa and Citrus Salad

Start the year eating healthy, this rich quinoa and citrus salad is full of flavor and is also very healthy, accompanied by a delicious lemon vinaigrette. Quinoa has a high protein content and is a good source of amino acids.

  • 4 cups water
  • 1 teaspoon Great Value® plain salt
  • 2 cups quinoa, rinsed and drained
  • 2 grapefruit, in segments
  • 2 oranges, in segments
  • 2 bell peppers, diced
  • 1 cup edamame, Cooked
  • 2 avocados
  • 1 cup pineapple, in cubes
  • 1/4 cups peanuts, toasted
  • 4 tablespoons sesame seeds, toasted
  • 1 cup panela cheese, in cubes
  • 1/3 cups lime juice
  • 3 tablespoons Extra Special® butter honey
  • 1 teaspoon garlic powder
  • 2 pinches Great Value® plain salt
  • 1 pinch pepper
  • 1 cup Extra Special Olive Oil®

  • In a pot over medium heat boil the water, add the salt and quinoa and cook over low heat and covered for 20 minutes. Chill
  • In a medium bowl, mix quinoa with grapefruit segments, orange, bell pepper, edamames, avocado, pineapple, peanuts, sesame seeds and panela cheese.
  • For the vinaigrette, mix the lemon juice with honey, garlic powder, salt and pepper. Emulsify with olive oil.
  • Serve the salad with the lemon vinaigrette.
