1 cup quinoa
1 tablespoon coconut oil
water
1 can tuna
1/2 tomatoes
5 tablespoons lemon juice

In a pot, add the coconut oil; once melted, add the quinoa. Wait 3 to 5 minutes for it to toast.
Once toasted, slowly add water until it covers all the quinoa. Let it simmer for 15 minutes.
Transfer the quinoa to a deep plate, add the can of tuna. Mix very well until both are combined, then add the diced tomato and lemon juice.
