Quinoa with Tuna

  • 1 cup quinoa
  • 1 tablespoon coconut oil
  • water
  • 1 can tuna
  • 1/2 tomatoes
  • 5 tablespoons lemon juice

  • In a pot, add the coconut oil; once melted, add the quinoa. Wait 3 to 5 minutes for it to toast.
  • Once toasted, slowly add water until it covers all the quinoa. Let it simmer for 15 minutes.
  • Transfer the quinoa to a deep plate, add the can of tuna. Mix very well until both are combined, then add the diced tomato and lemon juice.
