Place a bowl with the water with lemon juice next to a cutting board.
Cut the artichokes by removing the tough leaves from the outside and peeling the tough parts. Cut the artichoke in half and remove all the hairs from the middle, leaving only the soft and tender leaves and the heart for the salad.
Cut the artichokes into strips and place in the water with lemon so that they do not get brown.
Remove the artichoke from the water and mix with the lemon and olive oil. Add the salt and serve.
