Place a bowl with water and lemon juice next to a cutting board.
Cut the artichokes by removing the tough outer leaves and peeling the hard parts. Cut the artichoke in half and remove all the fuzzy bits inside, leaving only the tender, soft leaves and the heart for the salad.
Cut the artichokes into strips and place them in the lemon water to prevent them from turning brown.
Remove the artichoke from the water and mix with lemon and olive oil. Add salt and serve.
