Rice Salad with Tuna and Anchovy

Delicious and fresh rice salad that includes tuna and anchovy. It can be made a day in advance.

  • 500 grams white rice, cooked
  • 6 tablespoons extra virgin olive oil
  • 5 tablespoons balsamic vinegar
  • 10 black olives
  • 3 tablespoons capers
  • 6 canned artichoke heart
  • 250 grams canned tuna in water
  • 100 grams anchovy, canned
  • 10 cherry tomatoes
  • pepper, to taste

  • Cook the rice until tender, and while it is still warm, mix it with the oil and vinegar.
  • Add the other ingredients and mix well.
