2 cups cherry tomato , small round tomatoes
1 cup panela cheese , in cubes
4 teaspoons fresh cilantro, chopped
3 teaspoons white pine nuts, toasted
4 teaspoons olive oil
1 clove garlic
2 teaspoons balsamic vinegar

Finely chop the garlic clove.
Prepare the vinaigrette by mixing olive oil, chopped garlic, balsamic vinegar, and salt and pepper to taste.
Cut the cherry tomatoes in half (or if using regular tomatoes, cube them without the seeds).
In a bowl, mix the cherry tomatoes, cilantro, pine nuts, and panela cheese.
Add the vinaigrette and the salad is ready to serve.
