Salad with panela cheese

  • 2 cups cherry tomato , small round tomatoes
  • 1 cup panela cheese , in cubes
  • 4 teaspoons fresh cilantro, chopped
  • 3 teaspoons white pine nuts, toasted
  • 4 teaspoons olive oil
  • 1 clove garlic
  • 2 teaspoons balsamic vinegar

  • Finely chop the garlic clove.
  • Prepare the vinaigrette by mixing olive oil, chopped garlic, balsamic vinegar, and salt and pepper to taste.
  • Cut the cherry tomatoes in half (or if using regular tomatoes, cube them without the seeds).
  • In a bowl, mix the cherry tomatoes, cilantro, pine nuts, and panela cheese.
  • Add the vinaigrette and the salad is ready to serve.
