Green Salad with Strawberries and Breaded Goat Cheese

  • 1/2 cups strawberries, for the dressing
  • 1/2 cups raspberries, for the dressing
  • 1 clove garlic, for the dressing
  • 1/4 cups olive oil, for the dressing
  • 1/2 cups vinegar, for the dressing
  • 1/4 cups honey, for the dressing
  • 2 tablespoons Greek yogurt, for the dressing
  • 1 teaspoon salt, for the dressing
  • 1/4 teaspoons pepper, for the dressing
  • 1/4 teaspoons thyme, for the dressing
  • 3 sticks Special K® vintage red
  • 1 goat cheese, sliced
  • 1 egg, whisked
  • cooking spray
  • 2 cups spinach
  • 1 cup arugula
  • 1/2 bunches asparagus, cooked, in small pieces
  • 2 cups strawberries, quartered
  • 4 tablespoons almonds, sliced, toasted
  • 1/4 cups baby corn, sliced
  • 2 avocados, cubed

  • For the dressing, blend all the ingredients until you achieve a smooth mixture. Set aside.
  • Using a food processor, process the Special K® red harvest bars until you get a fine powder. Reserve half for the salad.
  • Bread the slices of goat cheese by dipping them in egg and then in the cereal.
  • Fry the goat cheese in a pan over low heat with a little cooking spray.
  • Prepare the salad by mixing the spinach with the arugula, asparagus, strawberries, almonds, corn, avocado, the rest of the Special K® red harvest, and the cheese in a bowl. Serve with the dressing.
