Kale-Shrimp Salad with Mango Dressing

This easy salad has kale as main ingredient, which is a great source of calcium and combined with shrimp and mango, will be an important source of nutrients.

  • 500 grams shrimp, clean and peeled
  • 2 tablespoons chile powder
  • 1 tablespoon garlic powder
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1 tablespoon Nutrioli® pure soybean oil
  • 1 mango, cut into cubes
  • 2 tablespoons apple cider vinegar
  • 1/4 cups orange juice
  • 1/4 cups lime juice
  • 1 tablespoon Dijon mustard
  • 1/2 cups Oli de Nutrioli® extra virgin olive oil
  • 1 tablespoon lime zest
  • 1 cup kale
  • 1/4 cups basil, whole
  • 1/2 cups cherry tomato, of various colors, in halves
  • 1/2 cups mango, in cubes
  • 1/4 cups red onion, julienne cut
  • 1/4 cups almonds, toast, filleted
  • 1 cup quinoa, cooked

  • In a bowl, mix the shrimp with chilli powder, garlic powder, lemon juice, honey and Pure Nutrioli® Soybean Oil, marinate in refrigerator for 30 minutes.
  • For the dressing, blend mango with apple cider vinegar, orange juice, lemon juice, Dijon mustard, Oli de Nutrioli® Extra virgin Olive Oil and lemon zest until emulsified.
  • In a pan, heat Pure Nutrioli® Soy Oil over medium heat and cook the shrimp. Season to taste, and remove.
  • In a bowl, serve kale, basil, cherry tomato, mango, purple onion, toasted almonds, quinoa and shrimp.
  • Serve the salad and accompany with the mango dressing.
