First, peel, wash, and clean the shrimp and place them in a bowl.
Chop the celery and lettuce and add them to the bowl with the shrimp.
Squeeze the juice of the 2 lemons and mix it with olive oil, salt, and pepper, then add it to the bowl with the shrimp. Mix everything well.
Cut two avocados into cubes and add them to the bowl with the shrimp. The other two avocados are cut in half and the skin is removed. Soak them in a little lemon water to prevent wilting.
Fill the 4 halves with the shrimp salad and place each one on an individual plate.
Finally, in another bowl, mix the mayonnaise and chipotle, and place a tablespoon on each avocado.
