Shrimp Waldorf Salad

This delicious variation of Waldorf salad features shrimp, apple, grapes, celery, and almonds. It is an original and tasty salad.

  • 30 large shrimp, headless
  • 1/2 cups mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 cups jocoque
  • 1 teaspoon tarragon, chopped fresh
  • 1 tablespoon mustard
  • 2 cups apple, diced apple
  • 2 cups red grapes, seedless, halved
  • 1 1/2 cups celery, chopped
  • 1/3 cups almonds, fileted
  • 18 lettuce, large (French, ear-shaped, Italian)

  • Start by cleaning and deveining the shrimp. Cook in boiling salted water until pink (3 minutes). Remove from water and cool with ice.
  • In a deep bowl, make the dressing by mixing mayonnaise, yogurt, lemon juice, tarragon, and mustard.
  • Cut the shrimp into small pieces and mix in a deep bowl with all the other ingredients. Add the dressing just before serving and mix well.
  • Place 2-3 lettuce leaves on 6 salad plates and add the salad next to them.
