30 large shrimp, headless
1/2 cups mayonnaise
1 tablespoon lemon juice
1/2 cups jocoque
1 teaspoon tarragon, chopped fresh
1 tablespoon mustard
2 cups apple, diced apple
2 cups red grapes, seedless, halved
1 1/2 cups celery, chopped
1/3 cups almonds, fileted
18 lettuce, large (French, ear-shaped, Italian)

Start by cleaning and deveining the shrimp. Cook in boiling salted water until pink (3 minutes). Remove from water and cool with ice.
In a deep bowl, make the dressing by mixing mayonnaise, yogurt, lemon juice, tarragon, and mustard.
Cut the shrimp into small pieces and mix in a deep bowl with all the other ingredients. Add the dressing just before serving and mix well.
Place 2-3 lettuce leaves on 6 salad plates and add the salad next to them.
