30 large shrimp, without head
1/2 cups mayonnaise
1 tablespoon lime juice
1/2 cups jocoque
1 teaspoon tarragon, chopped fresh
1 tablespoon mustard
2 cups apple, chopped gala cubes
2 cups red grapes, seedless in half
1 1/2 cups celery, chopped
1/3 cups almonds, filleted
18 lettuce, large (French, orejona, Italian)

Start by cleaning and deveining the shrimp. Cook in boiling water with salt until pink (3 minutes). Remove from water and cool with ice.
In a deep bowl make the dressing mixing mayonnaise, jocoque, lemon juice, tarragon and mustard.
Cut the shrimp into small pieces and mix in a deep bowl with all the other ingredients. Add the dressing just before serving and mix well.
Place in 6 salad dishes 2-3 lettuces and next to them the salad.
