Smoked Salmon and Avocado Salad

This smoked salmon and avocado salad recipe is a true delight thanks to its different textures and colors. It's perfect for taking to the office or for a spontaneous picnic.

  • 2 avocados, cut into small cubes
  • 2 limes
  • 1/2 cucumbers
  • 2 handfuls peppermint, basil and mint (mixed)
  • 2 tablespoons sunflower seeds, sesame and pumpkin seeds (mixed)
  • 1 handful watercress, (small)
  • extra virgin olive oils
  • coarse salt
  • ground peppers
  • 200 grams smoked salmon

  • Heat a pan until very hot for at least 10 minutes. Cut the ciabatta in half.
  • Place the chopped avocado in a bowl and add the lemon.
  • Use a vegetable peeler to cut the cucumber into thin slices lengthwise. Add the cucumber to the bowl with the avocado, add the herbs and watercress.
  • Add the seeds to the hot pan and lightly toast them. Set aside to cool.
  • Squeeze the other lemon into a bowl and add 3 tablespoons of olive oil, season with salt and pepper, and stir.
  • Place the ciabatta on the hot pan until lightly toasted. Once toasted, add a little of the lemon dressing.
  • Add a little of the dressing to the salad. Don't add too much; the salad should remain light.
  • Place a ciabatta on the plate and then add half of the salmon. On top, add half of the salad and sprinkle some seeds.
