5 cups fresh spinach, washed
1/4 cups cranberries
1/4 cups pine nuts
1/4 cups olive oil
1 lime, its juice
2 tablespoons Dijon mustard
pepper, to taste
salt, to taste

In a deep bowl, prepare the vinaigrette by mixing the lemon juice with the dijon mustard and season with salt and pepper. Add the oil and mix.
In a large bowl, mix the spinach with the blueberries and pine nuts. Just before serving add the dressing and mix well.
