Spinach salad with blueberries

A rich salad of spinach with blueberries and pine nuts and a dressing of lemon and mustard.

  • 5 cups fresh spinach, washed
  • 1/4 cups cranberries
  • 1/4 cups pine nuts
  • 1/4 cups olive oil
  • 1 lime, its juice
  • 2 tablespoons Dijon mustard
  • pepper, to taste
  • salt, to taste

  • In a deep bowl, prepare the vinaigrette by mixing the lemon juice with the dijon mustard and season with salt and pepper. Add the oil and mix.
  • In a large bowl, mix the spinach with the blueberries and pine nuts. Just before serving add the dressing and mix well.
