A rich salad of spinach with blueberries and pine nuts and a dressing of lemon and mustard.

Ingredients

4 servings
  • 5 cups of fresh spinach washed
  • 1/4 of Cup of cranberry
  • 1/4 of Cup of pinion
  • 1/4 of Cup of olive oil
  • 1 green lemon its juice
  • 2 spoonfuls of Dijon mustard
  • to taste of black pepper to taste
  • Salt to taste

    Preparation

    In a deep bowl, prepare the vinaigrette by mixing the lemon juice with the dijon mustard and season with salt and pepper. Add the oil and mix.
    In a large bowl, mix the spinach with the blueberries and pine nuts. Just before serving add the dressing and mix well.

    PRESENTATION

    To serve it can accompany the toasted pita bread salad or garlic bread.

    TIPS

    You can also add tuna or mozarella cheese if you want to add a protein to your salad.
