Spinach Salad with Jamon Serrano Dressing

Spinach salad with walnuts, mushrooms, Parmesan cheese and a rich dressing based on white wine and Serrano ham.

  • 1/2 cups olive oil
  • 1/2 cups serrano ham, minced
  • 1 tablespoon garlic
  • 1/4 cups dry white wine
  • 1/4 cups lime juice
  • spinach, well washed
  • 2 1/2 cups button mushrooms, sliced
  • 1/2 cups walnuts, chopped
  • 1/2 cups Parmesan cheese

  • Heat the oil and add the garlic and ham. Leave for 3 minutes. Add the wine and lemon juice. Allow to cool completely, season with salt and fresh pepper.
  • Stir the spinach leaves with the mushrooms, the cheese and the nuts, add the dressing and season.
  • You can add hard boiled egg if desired.
