Surimi Salad with Mayonnaise

  • 1/4 cups sour cream
  • 2 tablespoons chipotle chile
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 tablespoons seasoning sauce
  • 3 tablespoons lime juice
  • 2 cups surimi, cut into medium cubes
  • 1/4 cups tomato, cut into cubes
  • 1/2 cups carrot, cut into half-moons
  • 1/2 cups cucumber, cut into cubes
  • 1/4 cups red onion, cut into strips
  • 1/4 cups celery, cut into cubes
  • 1/4 cups parsley, finely chopped

  • Blend the mayonnaise with the cream, chipotle chili, seasoning sauce, Worcestershire sauce, and lemon juice until fully combined.
  • In a bowl, mix the surimi, tomato, carrot, cucumber, red onion, celery, and parsley; add the blended mixture, season with salt and pepper, and mix thoroughly.
  • Serve in a bowl and garnish with diced cuaresmeño chili. Enjoy!
