Tabbouleh Salad

  • 2 cups wheat
  • 1/2 cups parsley, fresh
  • 1/2 cups tomato
  • 1/4 cups cumin, fresh
  • 2 tablespoons peppermint, fresh
  • 1/8 cups olive oil
  • 1/8 cups lime juice
  • 1 pinch salt
  • 1 pinch pepper

  • Place the bulgur wheat in a bowl with water to hydrate for at least 20 minutes. Drain the excess water.
  • Finely chop the parsley, the tomato (peeled and seedless), cumin, and mint.
  • In a bowl, mix the bulgur, herbs, tomato, olive oil, lemon juice, and season with salt and pepper. Let the salad marinate for at least 30 minutes before serving.
