Place in wheat in a bowl with water to hydrate it for at least 20 minutes. Remove excess water.
Finely chop the parsley, tomato (peeled and seeded), cumin and mint.
In a bowl, mix the wheat, the herbs, the tomato, the olive oil, the lemon juice and season with salt and pepper. Let the salad marinate for at least 30 minutes before serving.
