Preparation
Place the wheat in a bowl with water to hydrate it for at least 20 minutes. Remove excess water.
Finely chop the parsley, tomato (peeled and seeded), cumin and mint.
In a bowl mix the wheat, the herbs, the tomato, the olive oil, the lemon juice and season with salt and pepper. Let the salad marinate for at least 30 minutes before serving.
