Thai Carrot Salad

  • 1 tablespoon canola oil
  • 2 tablespoons fish sauce
  • 1 teaspoon brown sugar
  • 2 tablespoons lemon juice
  • 1/4 cups fresh cilantro
  • 1 Jalapeño chile

  • Peel and shred the carrots into long strips. Chop some cilantro. Chop the jalapeño pepper. Put all of this in a salad bowl.
  • To prepare the dressing: mix oil, lemon juice, fish sauce, and sugar. Stir to dissolve the sugar. Add to the carrots and toss. You can add salt and pepper or more chili if desired.
