Thai Salad Recipe

  • For the chickpeas: place the water, onion, garlic, and salt in a pot. When it starts to boil, add the chickpeas and cook for 60 minutes or until well cooked.
  • For the dressing: in a bowl, mix the peanut butter, lime juice, soy sauce, Inés® Extra Virgin Chia Oil, maple syrup, salt, pepper, and chili flakes with a whisk. Set aside.
  • Place the chickpeas in a jar and add cucumber, carrot, red cabbage, cilantro, cashew nuts, and sesame seeds. Add the peanut butter dressing and enjoy this easy Thai salad.
