Tomato and Panela Cheese Salad

Delicious light salad with panela cheese, sliced tomatoes, and basil

  • 4 tomatoes, medium round
  • 2 cups panela cheese
  • leaves basil
  • 3 tablespoons olive oil
  • 1 tablespoon white vinegar
  • 1/2 limes
  • pepper

  • Slice the tomatoes into thin rounds using a serrated knife.
  • Also slice the panela cheese into rounds.
  • Mix the oil, vinegar, and lemon, season with salt and pepper, add 2 chopped basil leaves, and stir.
  • Arrange a slice of tomato on each plate, then a slice of cheese, another slice of tomato, and continue alternating until the plate is filled. Drizzle with the dressing and garnish with basil leaves. Serve immediately.
