Fresh Greek salad with feta cheese, tomatoes, and olives. A delicious Mediterranean flavor. To make it lighter, reduce the amount of olive oil by half.
2 cucumbers, peeled, cut into quarters, and seeded
4 tomatoes, large, sliced
1 red onion, finely chopped
3 cups feta cheese, diced
3/4 cups black olives, cut in half
1/4 cups lime juice
1 lettuce, large (optional)

Put the oil, vinegar, garlic, and oregano in a jar and shake well. Season with salt and pepper.
Combine in a salad bowl the cucumber slices, the tomatoes cut into quarters, the olives, the cheese cut into large cubes, and drizzle with lemon juice.
Add the dressing and mix well, then check if it needs more salt and pepper. Refrigerate for 20 minutes to enhance the flavor.
