Tropical Fruit Salad in Pineapple Boat

  • 1/4 watermelons
  • 1 kiwi
  • 1 peach
  • 1 banana
  • 1/4 cups blueberries
  • 1/2 oranges, just the juice

  • Cut a whole pineapple lengthwise in half. Remove the pulp and chop it into cubes. Set aside.
  • The pineapple shell should be hollow, resembling a deep dish or boat.
  • Peel and chop the kiwi, peach, banana, and watermelon. Place them in a bowl along with the blueberries and chopped pineapple. Squeeze the juice of ½ orange and mix the fruit.
  • Arrange the fruit salad inside the pineapple boat.
  • Add the cottage cheese, granola, and shredded coconut. Serve.
