Avocado and Artichoke Heart Salad (to go)

This delicious salad is perfect for preparing ahead and taking it to the office. It's super simple and delicious, with a rich balsamic vinaigrette, avocado, artichoke hearts, and a touch of pumpkin seeds.

  • 1/4 cups olive oil, (for the vinaigrette)
  • 2 tablespoons balsamic vinegar, (for the vinaigrette)
  • 1 pinch salt, (for the vinaigrette)
  • 1 pinch pepper, (for the vinaigrette)
  • 2 stems celery
  • 1/4 cups button mushrooms, sliced
  • 1/2 avocados, in pieces
  • 3 artichoke hearts, quartered
  • 1/4 cups onion, caramelized
  • 2 tablespoons pumpkin seeds
  • 1 cup watercress

  • For the vinaigrette, mix all the ingredients directly in a glass jar with a lid. Set aside.
  • Layer the celery, mushrooms, avocado, artichoke hearts, onion, pumpkin seeds, and finish with the watercress in the jar.
  • Close and refrigerate.
