  • 3/4 cups olive oil
  • 1/4 cups apple cider vinegar
  • 2 tablespoons honey
  • salt and pepper
  • fine herbs
  • 2 cups red cabbage, in medium strips
  • 1 cup mango, in medium cubes
  • 1 cup cherry tomato, in half
  • 1 cup cucumber, in medium cubes
  • 1 cup avocado, in medium cubes
  • 1 1/2 cups black beans, whole and cooked

  • In a bowl, combine the olive oil, apple cider vinegar, honey, salt, pepper, and herbs until integrated. Set aside.
  • Mix the cabbage, mango, tomatoes, cucumber, avocado, and beans in another bowl.
  • Serve the cabbage salad and drizzle with the vinaigrette.
