Feta Cheese and Olive Salad

  • 1/3 ciabatta breads, ready to bake
  • 2 tablespoons olive oil
  • 2 cloves garlic, mashed
  • 2 ounces mayonnaise
  • 2 ounces FAGE® Total 0% greek style yogurt
  • 2 tablespoons water
  • 1 bunch fresh chives, chopped
  • 7 ounces feta cheese
  • 1 avocado, ripe
  • 3.5 ounces cherry tomato, halved
  • 1 package lettuce
  • 2 ounces toasted pine nut
  • 2.1 ounces pitted kalamata olive

  • Cut the ciabatta into small cubes and fry in the oil and garlic until crispy and golden.
  • Combine the mayonnaise, FAGE® Total 0% Greek Style Yoghurt, and water to make a light dressing. Add half of the scallions.
  • Cut the feta cheese into small cubes. Peel the avocado and cut into small pieces.
  • Place the lettuce, pine nuts, olives, scallions, and dressing on a plate and mix well.
  • Add the avocado, tomato, and feta cheese, and mix gently.
  • Garnish with the bread cubes and serve.
