Green Leaf Salad with Dressing

  • 1 cup Oléico® safflower oil, for the dressing
  • 3 tablespoons Dijon mustard, for the dressing

  • pepper, to taste for the dressing
  • 1 teaspoon lime juice, for the dressing
  • 1 tablespoon wine vinegar, for the dressing
  • 3 tablespoons honey, for the dressing
  • 125 grams spinach
  • 60 grams arugula
  • 1/2 Romaine lettuce
  • 1/2 red sangria lettuce
  • 2 cups watercress
  • 4 tomatoes
  • 1 red onion
  • 100 grams goat cheese

  • Pour the oil into a container, add the mustard, salt, pepper, and honey. Using an immersion blender, blend the mixture, gradually adding the vinegar and lemon juice. Season the dressing with salt and pepper.
  • Cut the tomato into quarters. Slice the onion into feathers. Chop the lettuce.
  • Add all the vegetables to a bowl and toss.
  • Just before serving the salad, add the dressing to the vegetables and the crumbled goat cheese.
