Grilled Nopal Salad

A nopal salad will be a great complement to your meals, or a light yet nutritious and practical lunch. This nopal salad recipe is different from the usual, as the ingredients are grilled, that is, roasted on the griddle, along with some spicy habanero chiles. Nopales are an important source of soluble fiber, and when accompanied by beans, they will provide the nutrients your body needs. The combination of flavors and the smokiness from grilling will make them spectacular.

  • vegetable oil
  • 6 nopales
  • 4 Habanero chiles
  • 1 cup black beans, cooked, without broth
  • 1 cup tomato, finely chopped
  • 1 cup red onion, finely chopped
  • 1 cup cucumber, in cubes
  • 1/2 cups radish
  • 1/4 cups epazote, finely chopped
  • 1/4 cups lime juice
  • 1/4 cups olive oil
  • 2 tablespoons vinegar
  • pinches salt

  • Heat a grill and brush with oil; grill the nopales and habaneros on both sides. Then, on a cutting board, cut the nopales and chop the chiles. Reserve.
  • In a bowl, mix the beans, tomato, red onion, cucumber, radish, epazote, nopales, habanero chile, lime juice, olive oil, vinegar, and season with salt.
  • Serve and accompany with tortilla chips and pork rinds.
