To start, you need to disinfect the kale using the method of your choice.
Now cut the stems off each of the kale leaves, then start cutting them into strips (Roll several leaves of kale and begin chopping them into thick strips)
In a large bowl, add the kale, the juice of half a lemon, a little olive oil, and with your hands, toss the salad until the kale softens. Set aside.
In a small bowl, mix the remaining lemon juice with honey and plenty of ground pepper, add 1/4 cup of olive oil and continue stirring until it reaches the consistency of a dressing and you like the flavor; you can add salt.
Pour the dressing over the Kale Salad and as a final touch, add the Mango and Pepitas, toss and serve in 4 individual plates.
