Kale Salad with Mango and Pepitas

This delicious Kale Salad will help recharge your body with essential Vitamins like Iron; it is also low in calories and high in fiber, which will help improve your metabolism.

  • 1 bunch kale
  • 1 lime, its juice
  • 1/4 cups extra virgin olive oil
  • 2 tablespoons honey
  • pepper, freshly ground
  • 1 mango, diced
  • 1/4 cups pumpkin seeds, (Roasted Pumpkin Seeds with Salt)

  • To start, you need to disinfect the kale using the method of your choice.
  • Now cut the stems off each of the kale leaves, then start cutting them into strips (Roll several leaves of kale and begin chopping them into thick strips)
  • In a large bowl, add the kale, the juice of half a lemon, a little olive oil, and with your hands, toss the salad until the kale softens. Set aside.
  • In a small bowl, mix the remaining lemon juice with honey and plenty of ground pepper, add 1/4 cup of olive oil and continue stirring until it reaches the consistency of a dressing and you like the flavor; you can add salt.
  • Pour the dressing over the Kale Salad and as a final touch, add the Mango and Pepitas, toss and serve in 4 individual plates.
