Oriental Surimi Salad

A fresh surimi and lettuce salad, perfect for a hot afternoon or a light meal. The oriental salad is delicious, very easy to prepare, and perfect to eat as a tasty side dish or as the main course.

  • 4 tablespoons Cocina Mestiza® sweet and sour tamarind sauce, (for the dressing)
  • 3 tablespoons balsamic vinegar, (for the dressing)
  • 6 tablespoons olive oil, (for the dressing)
  • 1 teaspoon sesame oil, (for the dressing)
  • salt, to taste (for the dressing)
  • pepper, to taste (for the dressing)
  • 700 grams mixed lettuce, washed and disinfected, preferably bitter lettuces like escarole or endives
  • 3 pears, peeled and diced
  • 1 lime, (its juice)
  • 6 sticks surimi, shredded
  • 1 cup peanuts, candied
  • 1 avocado, cut into cubes

  • Dressing: Mix all the ingredients and whisk with a fork until the mixture emulsifies. Season with salt and pepper to taste and set aside.
  • Sprinkle the fruit and avocado with lime juice to prevent them from turning brown.
  • Mix the lettuces with the shredded surimi sticks, peanuts or walnuts, and the fruit cubes.
  • Pour the freshly whisked dressing over the salad and gently mix to distribute it well.
  • If including avocado cubes, add them last on top of the salad to prevent them from breaking apart.
