Potato Salad with Bacon and Vegetables

  • 1/2 cups red onion, sliced
  • 1 clove garlic, finely chopped
  • 1/2 cups celery, finely chopped

  • In a skillet over medium heat, fry the bacon in its own fat, drain and set aside.
  • In the same skillet, using the bacon fat, sauté the red onion, garlic, and celery until they start to change color. Add the carrot and potato; season with salt and pepper; pour in the fried bacon and the finely chopped parsley, and mix until fully incorporated.
