  • 1 1/2 cups bacon, finely chopped
  • 1/2 cups red onion, sliced
  • 1 clove garlic, finely chopped
  • 1/2 cups celery, finely chopped
  • 1 cup carrot, fanned
  • 4 potatoes, cooked, cut into medium-sized cubes

  • In a skillet over medium heat, fry bacon on its own fat. Drain and set aside.
  • In the same skillet and with the fat rendered out by bacon, fry red onion, garlic, and celery until they turn color. Add carrots and potatoes. Season with salt and pepper. Add fried bacon and finely chopped parsley. Mix thoroughly.
  • Serve bacony garden potato salad hot and garnish with parsley leaves.
