Red Cabbage Salad

This quick and easy red cabbage salad is one of the best side dishes ever! Featuring cauliflower, olive oil, chile flakes, honey, cilantro, mint, mayonnaise, red cabbage, apple, and a touch of cinnamon powder, this healthy dish is great for vegan and vegetarian diets. You’ll love it!

  • water, hot, for the cauliflower
  • 1 cup cauliflower, minced
  • 2 tablespoons olive oil
  • 2 tablespoons chile flakes
  • 2 tablespoons honey
  • 1/4 cups fresh cilantro, finely chopped
  • 1 tablespoon cinnamon powder
  • salt

  • 1 1/2 cups red cabbage, shredded
  • 1 cup apple, cut into small-sized cubes
  • 1/2 cups grapes, cut into round slices
  • 1 cup carrot, cut into sticks
  • 1/4 cups peppermint, finely chopped
  • 3 tablespoons lime juice
  • 1/4 cups orange juice
  • 2 tablespoons apple cider vinegar

  • 1/4 cups almonds, minced

  • In a small pot with hot water, cook cauliflower for 3 minutes. Drain and set aside.
  • In a skillet, heat oil and cook cauliflower, chile, honey, cilantro, and cinnamon. Season with salt and pepper. Let cool and set aside.
  • In a bowl, mix cabbage, cauliflower, apple, grapes, carrot, mint, lime juice, orange juice, and apple cider vinegar. Season with salt and pepper. Add almonds and mix.
  • Serve red cabbage salad cold on a plate.
