Purple Cabbage Salad

This colorful Christmas salad will be a different and special option during this season. With this recipe, you will have a salad with a fragrant flavor of cinnamon and honey, which makes the flavors contrast in a delicious way. Additionally, it is an excellent option for vegetarians, and you can also replace the cauliflower with some protein if you wish.

  • water, hot for the cauliflower
  • 1 cup cauliflower, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons chile flakes
  • 2 tablespoons honey
  • 1/4 cups fresh cilantro, finely chopped
  • 1 tablespoon cinnamon powder
  • salt
  • pepper
  • 1 1/2 cups red cabbage, in strips
  • 1 cup apple, in cubes
  • 1/2 cups grapes, sliced
  • 1 cup carrot, in sticks
  • 1/4 cups peppermint, finely chopped
  • 3 tablespoons lime juice
  • 1/4 cups orange juice
  • 2 tablespoons apple cider vinegar
  • salt
  • pepper
  • 1/4 cups almonds, chopped

  • In a small pot with hot water, cook the cauliflower for 3 minutes, drain, and set aside.
  • In a pan with hot oil, cook the cauliflower along with the chili, honey, cilantro, and cinnamon; season with salt and pepper. Chill and set aside.
  • In a bowl, mix the cabbage, cauliflower, apple, grape, carrot, mint, lemon juice and orange juice, apple cider vinegar, and season with salt and pepper. Add the almond and mix again.
  • Serve on a platter very cold.
