This colorful Christmas salad will be a different and special option on these dates. With this recipe you will have a scented cinnamon and honey salad, which makes the flavors contrast in a delicious way. In addition, it is an excellent option for vegetarians and you can also replace cauliflower with some protein, if you wish.

Ingredients

8 portions
  • enough Water, hot for cauliflower
  • 1 cup cauliflower, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons chili flake
  • 2 tablespoons honey
  • 1/4 cups fresh coriander, finely chopped
  • 1 tablespoon cinnamon powder
  • to taste salt
  • to taste black pepper
  • 1 1/2 cups red cabbage, in strips
  • 1 cup apple, diced
  • 1/2 cups grape, sliced
  • 1 cup carrot, in canes
  • 1/4 cups peppermint, finely chopped
  • 3 tablespoons lemon juice
  • 1/4 cups orange juice
  • 2 tablespoons apple vinegar
  • to taste salt
  • to taste black pepper
  • 1/4 cups almond, chopped

Preparation

In a pot with hot water, cook the cauliflower for 3 minutes, drain and reserve.
In a pan with hot oil, cook the cauliflower along with the chili, honey, cilantro and cinnamon; Season with salt and pepper. Cool and reserve.
In a bowl mix the cabbage, cauliflower, apple, grape, carrot, mint, lemon and orange juice, apple cider vinegar and season with salt and pepper. Add the almond and add again.
Serve on a very cold plate.

PRESENTATION

Serve on a plate and enjoy it cold.

TIPS

Chill the cauliflower before adding it to the salad; This ingredient is replaceable with some protein.
