Quinoa and Panela Cheese Salad (to go)

This quinoa and panela cheese salad is delicious for any occasion, plus it is a very complete and simple meal. Prepare it a day in advance and take it to work without issues. Add roasted chicken to get the benefits of the 3 macronutrients: fats, proteins, and carbohydrates.

  • 1/4 cups olive oil, (for the vinaigrette)
  • 2 tablespoons white vinegar, (for the vinaigrette)
  • 1 clove garlic, finely chopped (for the vinaigrette)
  • 1 pinch salt, (for the vinaigrette)
  • 1 pinch pepper, (for the vinaigrette)
  • 1/4 cups red onion, in cubes
  • 1/2 cups panela cheese, in cubes
  • 1/2 cups cucumber, in cubes
  • 1/4 cups heart of palm, sliced
  • 1/2 cups quinoa, cooked
  • 2 tablespoons sunflower seeds
  • 1 cup lettuce, chopped

  • For the vinaigrette, mix all the ingredients directly in a glass jar with a lid. Set aside.
  • Layer the red onion, cheese, cucumbers, hearts of palm, quinoa, sunflower seeds, and finish with the lettuce in a jar.
  • Close and refrigerate.
