These rice noodles are widely used in Asian cuisine and can be prepared in many ways; this recipe is delicious and extremely versatile. With this base, you can prepare it in any way and with whatever vegetables you want.
Bring water to a boil in a large pot, add 1 teaspoon of salt and turn off the heat. Add the rice noodles, stirring gently with the heat off, and let sit for 10 to 15 minutes or until soft. Drain.
Mix vinegar, lemon juice, and sugar in a small container, taste it, and season with salt. Add cilantro and sesame seeds.
Pour this mixture over the rice noodles and stir very well. Divide into 4 plates and sprinkle with peanuts. Serve with lemon slices.
