Rice Noodles

These rice noodles are widely used in Asian cuisine and can be prepared in many ways; this recipe is delicious and extremely versatile. With this base, you can prepare it in any way and with whatever vegetables you want.

  • 450 grams rice noodle
  • pinches salt
  • 3 tablespoons lime juice
  • 3 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 3 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon sesame seeds, toasted
  • 4 tablespoons peanuts, toasted, crushed

  • Bring water to a boil in a large pot, add 1 teaspoon of salt and turn off the heat. Add the rice noodles, stirring gently with the heat off, and let sit for 10 to 15 minutes or until soft. Drain.
  • Mix vinegar, lemon juice, and sugar in a small container, taste it, and season with salt. Add cilantro and sesame seeds. Pour this mixture over the rice noodles and stir very well. Divide into 4 plates and sprinkle with peanuts. Serve with lemon slices.
