Rice Noodles

These rice noodles are widely used in Asian food and can be prepared in many ways, this recipe is rich and extremely versatile. With this base you can prepare in the way and with the vegetables you want.

  • 450 grams rice noodle
  • pinches salt
  • 3 tablespoons lime juice
  • 3 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 3 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon sesame seeds, toasted
  • 4 tablespoons peanuts, roasted, crushed

  • Bring water to a boil in a large saucepan, add 1 teaspoon of salt and turn off. Add the rice noodles, with the flame off, move gently, leave there for 10 to 15 minutes or until they are soft. Strain.
  • Mix vinegar, lemon juice and sugar in a small container, taste it and season with salt. Add the coriander and sesame seeds. Put this mixture on the rice noodles, stir very well. Divide among 4 plates and sprinkle with the peanuts. Serve with lemon slices.
