Vegetable Tower with Eggplant

Delicious and healthy vegetable tower recipe, has eggplant, panela cheese and tomato, ideal for when you are on a diet and want to eat something delicious.

  • 1 eggplant
  • 300 grams panela cheese
  • 3 red beefsteak tomatoes
  • olive oil
  • balsamic vinegars
  • salt
  • pepper

  • Cut the aubergines along.
  • Cut the tomato and panela cheese into slices a little thick.
  • Add oil to a pan and roast the aubergines, the cheese and finally the tomato.
  • Assemble the towers with tomato, panela cheese and eggplant.
  • Add salt and pepper.
  • Put 2 tablespoons of olive oil and a little bit of balsamic vinegar.
