2 zucchinis, sliced and blanched in boiling salted water
2 cups spinach, washed and disinfected
1 cup arugula, washed and disinfected
3 cups kale, washed and disinfected
2 tablespoons olive oil
2 pinches salt
1 pinch ground black pepper
4 tablespoons black olives, finely chopped (for the vinaigrette)
3 tablespoons pickles, finely chopped (for the vinaigrette)
3 tablespoons mustard seed, (for the vinaigrette)
50 milliliters red wine vinegar, (for the vinaigrette)
150 milliliters olive oil, (for the vinaigrette)
1 pinch pepper
150 grams feta cheese, cut into medium cubes
100 grams pine nuts

Preheat the oven to 180° C.
Mix in a bowl the pumpkin, spinach, arugula, kale, olive oil, and season with salt and pepper.
Place the mixture on a baking tray. Bake for 10 minutes. Remove and serve immediately.
For the vinaigrette: mix in a medium bowl the olives, pickles, mustard, red wine vinegar, and olive oil with a whisk. Add pepper and set aside.
Serve over the warm salad, feta cheese, pine nuts, and dress with the vinaigrette.
