Warm Lentil Salad

  • 3 cups lentils, soaked
  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 1/4 cups red onion, finely chopped
  • 1 tablespoon shallot, finely chopped
  • 1 1/2 cups bell pepper, of various colors
  • 1 Jalapeño chile
  • 1 tablespoon thyme
  • 1 tablespoon oregano
  • 1/2 cups cherry tomato

  • avocado, for garnish

  • Cook the lentils in a pot over low heat with the vegetable broth until they are cooked.
  • In a pan, heat the olive oil and cook the red onion, shallot, colorful peppers, cuaresmeño chili, thyme, oregano, add the lentils, cherry tomatoes, and season to taste with salt and pepper.
  • Serve on a plate, garnish with avocado, and accompany with whole grain bread.
