Warm Lentil Salad with Roasted Vegetables

You will love this delicious dinner for its exquisite flavor of roasted vegetables and a touch of soy sauce; it will satisfy your cravings at night. It is a very complete dish as lentils are a great source of protein and flavor.

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1/4 cups soy sauce, low sodium
  • 2 tablespoons raw sugar
  • 4 carrots, sliced
  • 2 beets
  • 1 onion, cut into strips

  • Preheat the oven to 180°C.
  • In a pot over low heat, cook the lentils with the vegetable broth, season with salt and pepper, and let cook until tender. Set aside.
  • In a bowl, mix the soy sauce with the brown sugar. Set aside.
  • On a baking sheet, place the carrots, beetroot, and onion, add the previous preparation, and bake for 15 minutes, until they turn a golden color.
  • On a plate, place the lentils, top with the roasted vegetables, and enjoy.
