1 cup lentils
2 cups vegetable broth
1/4 cups soy sauce, low sodium
2 tablespoons raw sugar
4 carrots, sliced
2 beets
1 onion, cut into strips

Preheat the oven to 180°C.
In a pot over low heat, cook the lentils with the vegetable broth, season with salt and pepper, and let cook until tender. Set aside.
In a bowl, mix the soy sauce with the brown sugar. Set aside.
On a baking sheet, place the carrots, beetroot, and onion, add the previous preparation, and bake for 15 minutes, until they turn a golden color.
On a plate, place the lentils, top with the roasted vegetables, and enjoy.
