Warm Lentil Salad with Roasted Vegetables

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1/4 cups soy sauce, low sodium
  • 2 tablespoons raw sugar
  • 4 carrots, cut into round slices
  • 2 beets
  • 1 onion, cut into thin strips

  • Preheat oven to 356 °F.
  • In a pot over low heat, cook lentils with vegetable broth. Season with salt and pepper and cook until lentils are cooked through. Set aside.
  • In a bowl mix soy sauce and raw sugar. Set aside.
  • On a baking sheet, place carrots, beet, and onion. Add previous mixture and bake for 15 minutes until golden brown.
  • On a plate, serve lentils topped with roasted vegetables.
