Watercress Salad

  • 1 beet, large
  • 1 jicama, large
  • 1 bunch watercress
  • 2 mandarin oranges, (the segments)
  • 1 cucumber, into slices
  • 400 grams chicken, cooked and diced
  • 1/2 cups lime juice
  • 1 tablespoon vinegar
  • 1 clove garlic, finely chopped
  • 2 tablespoons basil, finely chopped
  • 1 cup olive oil
  • salt, and pepper

  • Peel the beet and jicama and cut them into small cubes.
  • Mix with the watercress, mandarin, cucumber, and chicken.
  • Make a vinaigrette by blending lemon, vinegar, garlic, basil, salt, and pepper.
  • When everything is well mixed, gradually pour in the oil, and with this, dress the salad and serve.
