1 beet, big
1 jicama, big
1 bunch watercress
2 mandarin oranges, (the segments)
1 cucumber, in slices
400 grams chicken, cooked and diced
1/2 cups lime juice
1 tablespoon vinegar
1 clove garlic, finely chopped
2 tablespoons basil, finely chopped
1 cup olive oil
salt, and pepper

The beets and jicama are peeled and diced.
It is mixed with watercress, tangerine, cucumber and chicken.
Make a vinaigrette by blending the lemon, vinegar, garlic, basil, salt and pepper.
When they are well mixed, pour in the oil little by little, and with this the salad is bathed and served.
