1 beet, large
1 jicama, large
1 bunch watercress
2 mandarin oranges, (the segments)
1 cucumber, into slices
400 grams chicken, cooked and diced
1/2 cups lime juice
1 tablespoon vinegar
1 clove garlic, finely chopped
2 tablespoons basil, finely chopped
1 cup olive oil
salt, and pepper
Preparation

Peel the beet and jicama and cut them into small cubes.
Mix with the watercress, mandarin, cucumber, and chicken.
Make a vinaigrette by blending lemon, vinegar, garlic, basil, salt, and pepper.
When everything is well mixed, gradually pour in the oil, and with this, dress the salad and serve.
