1/4 cups olive oil
1 teaspoon table salt
1 tablespoon shallot, chopped
1/4 cups orange juice
3 tablespoons white vinegar
3 tablespoons lime juice
1 jicama, large
6 slices watermelon, seedless

For the vinaigrette: mix all the ingredients (except for the jicama and watermelon) in a bowl and set aside.
Remove the rind from the watermelon and cut it into triangles or cubes.
Peel the jicama and cut it into sticks or cubes.
Place the fruit in a bowl and drizzle with the vinaigrette.
