Watermelon and Jicama Salad

  • 1 teaspoon table salt
  • 1 tablespoon shallot, chopped
  • 1/4 cups orange juice
  • 3 tablespoons white vinegar
  • 3 tablespoons lime juice
  • 1 jicama, large
  • 6 slices watermelon, seedless

  • For the vinaigrette: mix all the ingredients (except for the jicama and watermelon) in a bowl and set aside.
  • Remove the rind from the watermelon and cut it into triangles or cubes.
  • Peel the jicama and cut it into sticks or cubes.
