1 cup white cabbage, chopped
1 beet
1 carrot , large
12 big olives
125 grams bean, sprouted mung beans
1 sprig peppermint
1 tablespoon olive oil , virgin
1 pinch sea salt, unrefined
1 pinch pepper

Finely chop the celery stalk with its leaves. Then, grate the cabbage, beetroot, and carrot using a coarse grater.
Chop the parsley and mint leaves. Then, carefully mix all these ingredients and the black olives with the sprouted green soybeans.
Dress it to taste with a splash of oil, salt, and a pinch of pepper.
