Bolognese sauce

  • 1/4 cups butter
  • 2 tablespoons olive oil
  • 1 onion, medium bite
  • 1 carrot, minced
  • 1 sprig celery
  • 650 grams ground veal
  • 1/2 teaspoons salt
  • 1/4 teaspoons pepper
  • 1/4 teaspoons oregano
  • 1 cup dry white wine
  • 750 grams tomato

  • Heat butter and oil over low heat. Add onion, carrot and celery and cook for 10 minutes. Add the meat and cook 15 more minutes.
  • Season with salt and pepper. Increase the heat and put the wine and oregano. Cook until the wine evaporates alcohol.
  • Add the tomatoes to move and cook covered for 15 minutes, then crush the tomatoes with a fork.
  • Cover and cook over low heat for 2 hours, stirring occasionally so it does not stick. After that time the sauce will be thick.
  • Serve the sauce on a rich spaghetti.
