Burnt Sauce with Árbol Chile

This sauce is special for tacos de trompo and pozole; it is made with árbol chiles, tomatillos, garlic, onion, and cilantro. Its flavor is excellent for accompanying all kinds of dishes.

  • 1/2 kilos dried árbol chile
  • 1 kilo tomatillo, from fresadilla
  • 8 cloves garlic
  • 1/2 bunches fresh cilantro
  • 1/4 cups vinegar

  • In a large skillet, place the dried chiles to roast, stirring constantly until they are completely dark.
  • In one liter of water, boil the tomatoes with salt to taste until they are soft.
  • Blend the toasted chiles with the freshly cooked tomatoes, still hot, with a little of the water they were boiled in.
  • Blend in the garlic and vinegar, without adding too much water if you want the sauce to be thick.
  • Chop the fresh cilantro and add it to the sauce, and it's ready.....
