Place water and sugar in a pot and cook over medium heat until it reaches a syrup consistency, at 120°C.
Put the egg yolks in a bowl and beat until frothy. Begin to incorporate the syrup in a thin stream. Beat until it whitens.
Add the butter at room temperature. Beat until you achieve a well-emulsified mixture. Place in a bowl and refrigerate before using.
