Cascabel Chile Macha Sauce

This macha sauce with cascabel chile has a mildly spicy, subtle, smoky flavor with a perfect combination of tastes.

  • 2 cups sunflower oil
  • 1 1/2 tablespoons garlic, finely chopped
  • 1/2 cups sesame seeds
  • 1/2 cups sunflower seeds
  • 1 1/2 cups cascabel chile, cleaned, cut into small pieces
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons piloncillo, grated
  • 1 tablespoon sea ​​salt
  • 1 jar McCormick® mayonnaise, Monterrey Tigers, empty and clean, 390 g capacity

  • Heat a small pot over medium heat and add a bit of oil, sauté the garlic and sesame; add the sunflower seeds and continue frying.
  • Add the chiles and sauté for one minute, add the apple cider vinegar and wait for it to reduce (about 1 minute), add the rest of the oil, the piloncillo, and the sea salt, lower the heat to minimum and cook for 30 minutes.
  • Pour the sauce into the McCormick® mayonnaise jar, Monterrey Tigers edition, close it, and store it in a cool, dark place.
