1 cup Manchego cheese
2 tablespoons flour
1 cup cow's milk, at room temperature
1/2 tablespoons salt
1/2 tablespoons nutmeg
2 tablespoons butter

In a medium saucepan, melt the butter over low heat.
Add the flour to the butter and mix with a whisk for 1 minute.
Continue stirring and gradually pour in the milk. Make sure to keep stirring to avoid lumps.
Increase the heat to medium and continue cooking and stirring until the sauce has thickened and starts to boil.
Lower the heat and cook for 5 more minutes while continuing to stir.
Remove from heat and add the cheese, salt, and nutmeg. Mix well until the cheese has completely melted.
