Cheese sauce

The cheese sauce uses as a base the white sauce, bechamel, and gets its name from the delicious manchego cheese that is added.

  • 1 cup Manchego cheese
  • 2 tablespoons flour
  • 1 cup cow's milk, to time
  • 1/2 tablespoons salt
  • 1/2 tablespoons nutmeg
  • 2 tablespoons butter

  • In a medium saucepan melt the butter over low heat.
  • Add the flour to the butter and mix with a balloon whisk for 1 minute.
  • Continue mixing and pour the milk little by little. Be sure to continue mixing so that no lumps are made.
  • Increase the heat to medium and continue cooking and mixing until the sauce has thickened and begins to boil.
  • Lower the heat and cook for 5 more minutes while continuing to mix.
  • Remove from heat and add cheese, salt and nutmeg. Mix well until the cheese has melted in its entirety.
