Cheese Sauce

The cheese sauce uses white sauce, béchamel, as a base, and gets its name from the delicious Manchego cheese that is added.

  • 1 cup Manchego cheese
  • 2 tablespoons flour
  • 1 cup cow's milk, at room temperature
  • 1/2 tablespoons salt
  • 1/2 tablespoons nutmeg
  • 2 tablespoons butter

  • In a medium saucepan, melt the butter over low heat.
  • Add the flour to the butter and mix with a whisk for 1 minute.
  • Continue stirring and gradually pour in the milk. Make sure to keep stirring to avoid lumps.
  • Increase the heat to medium and continue cooking and stirring until the sauce has thickened and starts to boil.
  • Lower the heat and cook for 5 more minutes while continuing to stir.
  • Remove from heat and add the cheese, salt, and nutmeg. Mix well until the cheese has completely melted.
