The cheese sauce uses as a base the white sauce, bechamel, and gets its name from the delicious manchego cheese that is added.

Ingredients

10 portions
  • 1 cup manchego cheese
  • 2 tablespoons flour
  • 1 cup milk, to time
  • 1/2 tablespoons salt
  • 1/2 tablespoons nutmeg
  • 2 tablespoons butter

Preparation

In a medium saucepan melt the butter over low heat.
Add the flour to the butter and mix with a balloon whisk for 1 minute.
Continue mixing and pour the milk little by little. Be sure to continue mixing so that no lumps are made.
Increase the heat to medium and continue cooking and mixing until the sauce has thickened and begins to boil.
Lower the heat and cook for 5 more minutes while continuing to mix.
Remove from heat and add cheese, salt and nutmeg. Mix well until the cheese has melted in its entirety.

TIPS

This recipe is equivalent to a cup of cheese sauce.
